We use Noto Koshihikari rice from Ishikawa Prefecture. This rice, which is stored in a dedicated warehouse in Ishikawa Prefecture, has a texture that is perfect for sushi. The rice is cooked slightly dry with an exquisite amount of water, and then the carefully selected vinegar is absorbed all at once. The vinegar used for the rice is a blend of Fujisu Premium and Akasu Premium from Iio Brewery, a high-end vinegar specialist. We also use additive-free soy sauce, which is made using a method that does not use any chemical seasonings.
