    Moist and fluffy Kyoto-born Baumkuchen

A three-layer Baumkuchen with a beautiful contrast between the matcha dough and soy milk dough, made with plenty of Kyoto ingredients. For everyday snacks, special gifts, and delicious happiness always by your side. Enjoy the moist and fluffy texture, carefully baked layer by layer.

    Product

Baumkuchen, a Western confectionery inspired by tree rings. This “layering” inspired us to imagine the “Kasane” (layering of twelve-layered kimonos), a part of Kyoto culture, and we came up with the idea of a Baumkuchen with layers of different colors (materials). Each layer was carefully baked by artisans who have inherited the Kyoto craftsmanship spirit, resulting in a three-layered Baumkuchen with a beautiful contrast between the matcha and soy milk dough. The ingredients used are Uji matcha and Kyoto soy milk.
“Kyoto Baum” was born, allowing you to experience the full flavor of Kyoto.

The “feel” of the dough, something you only notice because it’s handmade
The secret to Kyo Baum’s popularity, its fluffy texture, is in the dough making.
After adding whipped butter to the matcha dough and soy milk dough, they are mixed carefully and quickly by hand, without using a machine, to check the condition of the dough.
It takes time and effort, but it is one of the tasks that prioritizes deliciousness.
