The raw materials used to make Japanese sweets are like gemstones to the craftsmen. For example, the Dainagon red beans of Tanba are like rubies, and glutinous rice is like a pearl, so to speak. Sugar, which was expensive in the past, was like gold. The bean paste, mochi, and dried sweets that are made from them are the result of the pursuit of sweetness, flavor, and texture.
The cool, refreshing groundwater of Kyoto, rich in water veins, has nurtured an elegant and excellent confectionery culture. And the deliciousness of the sweets began with the work of the craftsmen, who carefully selected high-quality ingredients that are the blessings of the earth. “Kanshundo” never forgets this work.
Kanshundo is a long-established store that has been protecting the Japanese sweets making reputation in front of the Great Buddha for a long time. The family history dates back to the construction of the Great Buddha of Hokoji Temple, and it is an old family that has walked the history of history together with the old wisteria in our garden. The company has a long history with shrines and temples, and has been the supplier of traditional sweets to Toyokuni Shrine and the former Rokujo Imperial Palace. The first Fujiya Seishichi founded the company in 1865, and today, it is in its sixth generation. While passing on traditional techniques to the company, each generation has spent their lives cultivating their own unique style in their specialty. The second generation (Tokubei) focused on creative sweets, and the third generation (Kinjiro) was fascinated by rice cracker techniques. Each generation of owners continues to pass on rare sweets to future generations. Now, among the many masterpieces left by the previous owners, we have already released several products that combine today’s techniques with manufacturing techniques that have been lost or forgotten, or family secrets. The seasonal calendar of nature woven together by high-quality ingredients, water, and the various seasons. Taking advantage of the favorable conditions that Kyoto has to offer for Kyoto sweets to flourish, we will continue to strive to create sweets that are made with care and sincerity without compromising tradition. We hope that you will continue to support Kanshundo, both our traditional and creative sweets.
