    Selected as one of Tabelog Ramen WEST 100 Famous Restaurants for 6 consecutive years.

    This restaurant is particular about making hand-made noodles, using domestically produced ingredients, and not using chemical seasonings or preservatives.

    The store only has 10 seats at the counter. In the back is the noodle making room, and there are many cases of dried sardines piled up at the entrance and in the back. ”

    There was a line of about 10 people outside

    As it is one of the most popular restaurants in Takatsuki, there was a line of about 10 people outside.
    However, to make it easier for people to stand in the hot sun, a tent was set up in front of the restaurant. This kind of consideration was appreciated. As you wait in line, a staff member will come to take your order. That said, basically, there is only one type of ramen here, “dried sardine soba.” The only other options are whether you want a topping of boiled egg, a large serving of noodles, or rice.

    We were shown into the restaurant and the bowl arrived shortly after. First, we took the customary commemorative photo. The golden, shining bowl, covered in back fat, was beautiful. First, we took a sip of the soup. The rich flavor of dried sardines spread throughout our mouths.

     

    The chewy noodles

    The thick, homemade wavy noodles have a chewy texture. The pork slices are large and chewy, making it very satisfying to eat. Personally, I think this is the best of the dried sardine ramen in Osaka. It was a very well-made bowl.

     

    The delicious soup stock

    The soup is made with dried sardines and soy sauce, with the flavor of Rishiri kelp as the base, and the oil from the dried sardines, back fat, and pork belly melts into the soup, creating a delicious combination. The homemade, hand-made, extra thick, curly noodles are delicious with a high water content. The dried sardines, back fat, and pork belly char siu will whet your appetite.

    The soup is crisp with the flavor of dried sardines! The back fat is a nice accent. It’s not sweet, and it’s not heavy. The noodles are thick and curly, and I personally prefer them a little flatter and more chewy. Maybe they’re not chewy enough. There’s plenty of spring onions, which makes it very refreshing to eat.

    A punchy, addictive flavor

    The soup has a strong dried sardine flavor and a slight bitterness, and the strong soy sauce flavor is quite salty, but the punch is addictively delicious. The noodles are homemade, extra thick noodles made from a blend of whole wheat flour using the hand-made udon method. I love the combination of these extra thick noodles and the strong dried sardine soup in Tsubame-Sanjo Back Fat Ramen.
