    CULTURE WORKSHOP Details

Hatcho Miso has been crafted for over 600 years and is named after its location, which is about “eight cho” (an old Japanese unit of measurement) or approximately 870 meters from Okazaki Castle. It’s celebrated for its unique taste and health benefits, thanks to its all-natural fermentation process.

    Key Attractions

    1. Historic Production Facilities
      • The factories maintain traditional production methods that have been used since the Edo period.
      • Miso is fermented in large cedar barrels, each weighing about three tons, and aged for two years under carefully stacked river stones.
